Vegetable Beef Soup

Ingredients
  

  • 1.5 pounds beef stew meat cut into bite-sized pieces
  • 4 cups beef broth
  • 1 can 28 oz crushed tomatoes
  • 3 medium russet potatoes peeled and diced
  • 1 bag 16 oz frozen mixed vegetables
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Place the beef stew meat in the bottom of your slow cooker.
  2. Add the beef broth, crushed tomatoes, potatoes, frozen mixed vegetables, onion, and garlic to the slow cooker.
  3. Stir in the tomato paste, Worcestershire sauce, Italian seasoning, salt, and black pepper until well combined.
  4. Cover and cook on low for 7-8 hours or high for 4-5 hours, until the beef is tender and the vegetables are cooked through.
  5. Stir well before serving and adjust seasoning to taste.
