Vegan Sweet Potato Fudge Brownies

Sweet potato is used along with a flax egg to make these brownies which are chocolatey, fudgy, and eggless as well as dairy-free.

Ingredients
  

  • 1 cup mashed sweet potato
  • 1 tbsp ground flaxseed
  • 3 tbsp water
  • 1/2 cup cocoa powder
  • 1/2 cup oat flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil melted
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 cup dairy-free chocolate chips

Method
 

  1. Preheat the oven to 350F and grease an 8x8 pan.
  2. Stir the flaxseed and water together and let sit 5 minutes to gel.
  3. Whisk the sweet potato, maple syrup, coconut oil, vanilla, and flax egg until smooth.
  4. Mix in the cocoa, oat flour, and baking soda, then fold in the chocolate chips.
  5. Bake 26 to 30 minutes and cool fully so they firm into fudge.

Notes

These get even fudgier after a night in the fridge.
