Ingredients
  

  • 8 oz cream cheese softened
  • 1/2 cup butter softened
  • 2 cups powdered erythritol or monk fruit sweetener
  • 1 vanilla bean pod seeds scraped (or 2 teaspoons vanilla bean paste)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons heavy cream

Method
 

  1. Line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a large mixing bowl, beat together the softened cream cheese and butter until smooth and fluffy, about 2-3 minutes.
  3. Add the powdered sweetener gradually, beating well after each addition to avoid lumps.
  4. Mix in the vanilla bean seeds, vanilla extract, salt, and heavy cream until completely smooth and well combined.
  5. Spread the fudge mixture evenly into the prepared pan, smoothing the top with a spatula.
  6. Refrigerate for at least 2 hours or until firm. Cut into 24 small squares and store in an airtight container in the fridge for up to 2 weeks.
