Ingredients

  • 4 slices rye or whole wheat bread
  • 2 tablespoons butter softened
  • 6 ounces sliced turkey breast
  • 4 slices Swiss cheese
  • 1/4 cup sauerkraut drained and squeezed dry
  • 2 tablespoons Thousand Island dressing
  • Pinch of black pepper

Method

  1. Butter one side of each bread slice. On the unbuttered side of two slices, spread the Thousand Island dressing.
  2. On the dressing-covered slices, layer one slice of Swiss cheese, half the turkey, the sauerkraut, another slice of Swiss, and top with the remaining bread slices, butter-side up.
  3. Heat a large skillet over medium heat and place both sandwiches in the pan.
  4. Cook for 4-5 minutes until golden brown and crispy, pressing down gently with a spatula. Carefully flip and cook another 4-5 minutes.
  5. Remove from heat when the cheese is completely melted and bread is toasted. Let rest for 1 minute, slice in half, and enjoy warm!
