Ingredients
  

  • 1 pound lean ground turkey 93% lean
  • 1 medium onion diced
  • 1 bell pepper diced
  • 3 cloves garlic minced
  • 1 can 28 oz crushed tomatoes
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese Greek yogurt, green onions

Method
 

  1. In a large pot over medium-high heat, cook the ground turkey until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.
  2. Add the diced onion and bell pepper, cooking until softened, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.
  3. Add the crushed tomatoes, kidney beans, chicken broth, chili powder, and cumin. Stir everything together well.
  4. Bring the chili to a boil, then reduce heat to low and simmer for 20 minutes, stirring occasionally.
  5. Season with salt and pepper to taste. Serve hot with your favorite low-calorie toppings if desired.
