Turkey and Cranberry Quesadilla

Ingredients
  

  • 1 cup sliced turkey deli or leftover
  • 1/4 cup cranberry sauce
  • 2 tablespoons cream cheese softened
  • 2 large flour tortillas
  • Cooking spray or a small amount of butter

Method
 

  1. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or butter.
  2. In a small bowl, mix the softened cream cheese with the cranberry sauce until well combined.
  3. Place one flour tortilla in the skillet.
  4. Spread the cranberry and cream cheese mixture evenly over the tortilla.
  5. Layer the sliced turkey evenly over the cranberry and cream cheese mixture.
  6. Cover with the second flour tortilla.
  7. Cook until the bottom tortilla is golden brown and the filling is warmed through, about 3-4 minutes.
  8. Carefully flip the quesadilla using a spatula, and cook the other side until golden brown, about 2-3 minutes.
  9. Remove from the skillet and let it cool for a minute before cutting into wedges.
  10. Pack in a lunchbox with a side of baby carrots or apple slices for a balanced meal.
