Tostones with Garlic Mojito

Twice-fried green plantain rounds with a zesty garlic-citrus mojito dipping sauce.

Ingredients
  

  • 3 green plantains peeled and sliced
  • 2 cups vegetable oil for frying
  • 4 cloves garlic minced
  • 3 tbsp olive oil
  • 2 tbsp lime juice fresh
  • 1 tsp salt
  • 2 tbsp cilantro chopped

Method
 

  1. Heat the vegetable oil in a deep skillet to about 350F.
  2. Fry the plantain slices for 3 to 4 minutes until lightly golden but not browned, then remove and drain.
  3. Flatten each piece with the bottom of a glass or a tostonera until thin.
  4. Fry the flattened pieces again for 2 to 3 minutes until crisp and golden, then drain on paper towels and sprinkle with salt.
  5. Whisk the garlic, olive oil, lime juice, salt, and cilantro together to make the mojito.
  6. Serve the tostones warm with the garlic mojito for dipping.

Notes

Keep the plantains in salted water for a few minutes before the first fry to help them crisp up evenly.
