Tomato Bruschetta Tops

Ingredients
  

  • 1 French baguette sliced into ½-inch rounds
  • 4 cups diced Roma tomatoes about 6-7 tomatoes
  • 3 cloves garlic minced
  • ½ cup fresh basil leaves chopped
  • ¼ cup extra virgin olive oil plus more for brushing
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup shredded Parmesan cheese optional

Method
 

  1. Preheat oven to 400°F and arrange baguette slices on a large baking sheet.
  2. Brush both sides of bread slices lightly with olive oil and bake for 8-10 minutes, flipping halfway, until golden and crispy.
  3. While bread toasts, combine diced tomatoes, minced garlic, chopped basil, ¼ cup olive oil, balsamic vinegar, salt, and pepper in a medium bowl. Mix well and let sit to marinate.
  4. Once bread is cool enough to handle, you can rub a cut garlic clove on each slice for extra flavor (totally optional but delicious!).
  5. Using a slotted spoon, top each toasted slice with the tomato mixture, allowing excess liquid to drain off.
  6. Sprinkle with Parmesan cheese if desired and arrange on a serving platter.
  7. Serve immediately for the crispiest results, or within 30 minutes of assembling.
