Tomato Bruschetta on Garlic Crostini

Bruschetta is one of those things that always feels elegant but takes about fifteen minutes start to finish. The key is making the tomato topping ahead so the flavors have time to meld, then spooning it onto freshly toasted crostini right before serving so they stay crispy.

Ingredients
  

  • 1 French baguette sliced into 1/3-inch rounds
  • 4 tbsp olive oil divided
  • 2 cloves garlic 1 halved and 1 minced
  • 4 Roma tomatoes diced and seeded
  • 1/4 cup fresh basil chiffonade
  • 2 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Method
 

  1. Arrange baguette slices on a baking sheet, brush with 2 tbsp olive oil, and broil 2-3 minutes per side until golden.
  2. Rub the cut side of a garlic clove over each warm crostini.
  3. Combine diced tomatoes, minced garlic, basil, balsamic vinegar, remaining olive oil, salt, and pepper; toss well.
  4. Let the tomato mixture sit at room temperature for 20 minutes for best flavor.
  5. Spoon tomato topping onto each crostini just before serving.
  6. Finish with a sprinkle of Parmesan cheese.
