Ingredients

  • 12 oz linguine pasta
  • 1 pint cherry tomatoes halved
  • 1 cup fresh basil leaves torn
  • 4 cloves garlic thinly sliced
  • 4 cups vegetable broth
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon red pepper flakes
  • Freshly grated Parmesan cheese for serving

Method

  1. Add the linguine, cherry tomatoes, basil, garlic, vegetable broth, olive oil, salt, and red pepper flakes to a large pot or deep skillet.
  2. Bring to a boil over high heat, then reduce to medium heat and continue cooking for 9-12 minutes, tossing frequently with tongs to prevent sticking.
  3. Cook until pasta is al dente and most of the liquid has been absorbed, creating a light sauce.
  4. Remove from heat and let rest for 2-3 minutes to thicken slightly.
  5. Serve immediately topped with freshly grated Parmesan cheese and extra basil if desired.
