Preheat your oven to 375°F and heat olive oil in a large oven-safe skillet over medium heat.
Add the diced onion and cook for 5 minutes until softened, then add garlic and cook for another minute until fragrant.
Pour in the crushed tomatoes, oregano, paprika, red pepper flakes, salt, and pepper, then simmer for 8-10 minutes until the sauce thickens slightly.
Make 8 small wells in the tomato sauce using the back of a spoon, then carefully crack one egg into each well.
Transfer the skillet to the preheated oven and bake for 8-12 minutes until the egg whites are set but yolks are still runny.
Remove from oven, garnish with fresh basil, and serve immediately with whole grain toast if desired.
