Thermos Chicken and Rice Soup

A thermos of homemade-ish chicken and rice soup is the ultimate cold-weather lunch, and it takes almost no effort if you use rotisserie chicken and a good broth. Make a big pot on the weekend and portion it out all week. Your kid will actually eat the whole thing.

Ingredients
  

  • 1 cup cooked chicken shredded
  • 1/2 cup cooked white rice
  • 2 cups chicken broth
  • 1/4 cup diced carrots
  • 1/4 cup diced celery
  • 1/2 teaspoon dried parsley
  • 1 pinch salt and pepper

Method
 

  1. Preheat thermos by filling with boiling water for 5 minutes, then empty.
  2. Combine chicken broth, carrots, and celery in a small saucepan and simmer over medium heat for 5 minutes until vegetables soften.
  3. Add shredded chicken, cooked rice, parsley, salt, and pepper and heat through for 2 more minutes.
  4. Pour hot soup into the preheated thermos immediately, seal, and pack.
