Thai Peanut Chicken Wontons

Tender chicken in a creamy peanut sauce, coupled with crispy fried wontons.

Ingredients
  

  • 1.5 cups shredded cooked chicken
  • 0.33 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 20 wonton wrappers
  • 4 cups vegetable oil for frying

Method
 

  1. Whisk peanut butter, soy sauce, and lime juice into a thick sauce.
  2. Stir in the shredded chicken until coated.
  3. Spoon filling into wrappers, dampen the edges, and fold into triangles.
  4. Heat oil to 350°F.
  5. Fry for 2 to 3 minutes until golden and crisp.
  6. Drain and serve with extra peanut sauce for dipping.

Notes

A sprinkle of crushed peanuts and cilantro on top makes them feel extra special.
