Teriyaki Chicken with Broccoli

Homemade teriyaki sauce (that's better than takeout) over juicy chicken and perfectly crisp-tender broccoli.

Ingredients
  

  • 1.5 lb boneless skinless chicken breasts cubed
  • 4 cups broccoli florets
  • 0.33 cup soy sauce
  • 3 tbsp honey
  • 2 tsp fresh ginger grated
  • 2 cloves garlic minced
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil

Method
 

  1. Whisk soy sauce, honey, ginger, garlic, and cornstarch with 2 tablespoons water to make the sauce.
  2. Heat oil in a large skillet over medium-high and cook the cubed chicken until browned and cooked through, about 6 minutes.
  3. Add the broccoli and a splash of water, cover, and steam 3-4 minutes until crisp-tender.
  4. Pour in the sauce and stir until it thickens and coats everything, about 2 minutes.
  5. Portion over cooked rice in containers.

Notes

Slightly undercook the broccoli so it doesn't go mushy when you reheat it.
