Teriyaki Chicken Stir-Fry

Chicken and bright veggies in a homemade teriyaki sauce over rice.

Ingredients
  

  • 1.5 lb chicken thighs cubed
  • 2 tbsp vegetable oil
  • 1 red bell pepper sliced
  • 2 cups broccoli florets
  • 0.33 cup soy sauce
  • 3 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1 tsp fresh ginger grated

Method
 

  1. Whisk the soy sauce, honey, rice vinegar, ginger, and cornstarch with two tablespoons of water to make the sauce.
  2. Heat the oil in a large skillet over high heat and cook the chicken until browned and cooked through.
  3. Push the chicken aside and add the bell pepper and broccoli, stir-frying for three minutes until crisp-tender.
  4. Pour the sauce over everything and toss to coat.
  5. Simmer for two minutes until the sauce thickens and turns glossy.
  6. Serve hot over steamed rice with a sprinkle of sesame seeds.

Notes

Cut the chicken into even pieces so it cooks at the same rate.
