Teriyaki Chicken Skewers with Sesame Dipping Sauce

These skewers are genuinely simple but they look like you put in way more effort than you did. Marinate the chicken the night before, thread them in five minutes, and grill or broil right before guests arrive. The sesame dipping sauce takes two minutes to whisk together.

Ingredients
  

  • 2 lbs boneless skinless chicken thighs cut into 1-inch cubes
  • 1/3 cup soy sauce
  • 3 tbsp honey
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1/4 cup mayonnaise
  • 1 tbsp sriracha
  • 1 tsp sesame seeds
  • Wooden skewers soaked in water

Method
 

  1. Whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make the marinade.
  2. Toss chicken pieces in the marinade and refrigerate for at least 1 hour or overnight.
  3. Thread marinated chicken onto soaked wooden skewers.
  4. Grill or broil on high heat for 5-6 minutes per side until cooked through and slightly charred.
  5. Whisk together mayonnaise and sriracha for the dipping sauce.
  6. Arrange skewers on a platter, sprinkle with sesame seeds, and serve with dipping sauce.
