Teriyaki Chicken Ramen Bowls

This is the weeknight dinner that feels fancy but takes barely any effort. You cook simple teriyaki chicken, boil some ramen noodles, and pile everything in a bowl with whatever vegetables you have on hand. Kids love building their own bowl and they eat way more vegetables this way.

Ingredients
  

  • 1 lb boneless skinless chicken thighs
  • 3 packages instant ramen noodles seasoning packets discarded
  • 1/3 cup soy sauce
  • 3 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 cup shredded carrots
  • 2 green onions sliced
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame seeds

Method
 

  1. Whisk together soy sauce, honey, sesame oil, garlic, and ginger in a small bowl to make the teriyaki sauce.
  2. Heat vegetable oil in a skillet over medium-high heat and cook chicken thighs for 5 to 6 minutes per side until cooked through.
  3. Pour the teriyaki sauce over the chicken in the pan and let it bubble and coat the chicken for 2 minutes, then slice the chicken.
  4. Cook ramen noodles according to package directions, drain, and divide among bowls.
  5. Top each bowl with sliced teriyaki chicken, shredded carrots, green onions, and a sprinkle of sesame seeds.
