- Combine the soy sauce, brown sugar, mirin, ginger, garlic, and cornstarch with 2 tablespoons water in a bowl and set aside.
- Heat 1 tablespoon oil in a large skillet over medium-high and cook the chicken until browned and cooked through, about 6 minutes. Remove.
- Add the remaining oil, broccoli, bell pepper, and mushrooms and stir-fry 5 minutes until crisp-tender.
- Return the chicken to the pan and pour in the teriyaki sauce.
- Toss everything together and simmer 2 to 3 minutes until the sauce turns thick and shiny.
- Serve over rice and top with sesame seeds.
Notes
No mirin? A teaspoon of honey or a splash of rice vinegar works fine.
