Tapatio Enchilada Sauce Chili

Ingredients
  

  • 2 pounds ground turkey
  • 1 large white onion diced
  • 4 cloves garlic minced
  • 2 cans 15 ounces each red enchilada sauce
  • 1/4 cup Tapatio hot sauce
  • 1 can 28 ounces diced tomatoes
  • 2 cans 15 ounces each pinto beans, drained and rinsed
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 1/2 teaspoons salt
  • 1 cup chicken broth
  • 2 tablespoons olive oil

Method
 

  1. Heat olive oil in a large pot over medium-high heat and add the diced onion, cooking until softened, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the ground turkey to the pot, breaking it apart with a spoon, and cook until no longer pink, about 6-8 minutes.
  4. Stir in the chili powder, cumin, and oregano, cooking for 1 minute.
  5. Pour in the enchilada sauce, Tapatio hot sauce, diced tomatoes with their juices, pinto beans, chicken broth, and salt.
  6. Bring the mixture to a boil, then reduce heat to medium-low and simmer for 35 minutes, stirring occasionally.
  7. Taste and adjust seasoning with additional Tapatio or salt if desired before serving.
