Ingredients

  • lbs ground beef or turkey
  • 1 packet 1 oz taco seasoning
  • ¾ cup water
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 10 oz Rotel tomatoes with green chilies, undrained
  • 1 cup sour cream
  • 2 cups shredded Mexican blend cheese divided
  • 3 cups Nacho Cheese Doritos crushed (about ¾ of a regular bag)
  • Optional toppings: diced tomatoes sliced jalapeños, shredded lettuce, extra sour cream, salsa

Method

  1. Preheat oven to 350°F and spray a 9x13-inch baking dish with cooking spray.
  2. In a large skillet over medium-high heat, brown the ground beef until fully cooked, about 8 minutes. Drain any excess fat.
  3. Add taco seasoning and water to the beef. Stir and simmer for 3-4 minutes until thickened.
  4. Remove from heat and stir in black beans, corn, Rotel tomatoes, sour cream, and 1 cup of shredded cheese. Mix until well combined.
  5. Spread 2 cups of crushed Doritos in the bottom of the prepared baking dish to create a crunchy base layer.
  6. Pour the beef mixture over the Doritos layer and spread evenly. Top with remaining 1 cup of cheese, then sprinkle remaining 1 cup of crushed Doritos on top.
  7. Bake for 20-25 minutes until cheese is melted and casserole is heated through. Serve with your favorite taco toppings and watch it disappear!
