Ingredients
  

  • 3 large sweet potatoes peeled
  • 3 tablespoons olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 4 oz goat cheese softened
  • ¼ cup dried cranberries chopped
  • ¼ cup chopped pecans toasted
  • 2 tablespoons honey
  • Fresh rosemary sprigs for garnish

Method
 

  1. Preheat your oven to 425°F and line two baking sheets with parchment paper.
  2. Slice sweet potatoes into ¼-inch thick rounds (try to keep them uniform so they cook evenly).
  3. Toss the rounds with olive oil, salt, and pepper in a large bowl until evenly coated.
  4. Arrange in a single layer on the baking sheets (don't overlap or they'll steam instead of roast!).
  5. Roast for 20-25 minutes, flipping halfway through, until tender and edges are slightly caramelized.
  6. Let cool for 5 minutes, then top each round with a small dollop of goat cheese.
  7. Sprinkle with cranberries and pecans, drizzle with honey, and garnish with tiny rosemary sprigs. Serve warm or at room temperature.
