Sweet Potato Pancakes

Ingredients
  

  • 1 cup mashed sweet potato
  • 1 cup all-purpose flour
  • 1 tablespoon brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Method
 

  1. Combine wet ingredients with dry ingredients, stirring until just mixed.
  2. Cook until bubbles form on the surface and the edges look dry, about 2-3 minutes.
  3. Flip and cook for another 2-3 minutes until golden brown.
  4. Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  5. In a large bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
  6. In another bowl, whisk mashed sweet potato, eggs, milk, vanilla, and brown sugar until smooth.
  7. Pour 1/4 cup of batter onto the skillet for each pancake.
  8. Serve warm with maple syrup, fresh fruits, or your favorite topping.
