Sweet Potato Gratin

Ingredients
  

  • 2 pounds sweet potatoes peeled and thinly sliced
  • 1 cup heavy cream
  • 2 cloves garlic minced
  • 1 cup Gruyère cheese shredded
  • 1 teaspoon fresh thyme
  • Salt and pepper to taste

Method
 

  1. Add a layer of Gruyère cheese.
  2. Arrange a layer of sweet potato slices at the bottom.
  3. Butter a 9x13-inch baking dish.
  4. Cover with foil and bake for 30 minutes.
  5. In a small pot, heat cream and garlic just until it simmers.
  6. Let it cool for 5 minutes before serving.
  7. Pour the warm cream over the potatoes.
  8. Preheat the oven to 400°F (204°C).
  9. Remove foil and bake for another 15-20 minutes until potatoes are tender and cheese is golden brown.
  10. Repeat the layers until all ingredients are used, ending with cheese.
  11. Sprinkle with salt, pepper, and thyme.
