Sweet Potato Gnocchi

Ingredients
  

  • 2 medium sweet potatoes cooked and mashed
  • 1 cup ricotta cheese
  • 1 egg lightly beaten
  • 1 teaspoon kosher salt
  • 1/4 teaspoon cayenne pepper optional
  • 1 1/2 to 2 cups all-purpose flour
  • Fresh sage leaves
  • Butter for frying
  • Parmesan cheese for serving

Method
 

  1. Add the ricotta cheese, egg, salt, and cayenne. Mix until smooth.
  2. Bring a large pot of salted water to a boil. Cook the gnocchi in batches until they float to the top, about 2-3 minutes.
  3. Divide the dough into small portions. Roll each portion into ropes and cut into bite-sized pieces.
  4. Gradually add the flour until a soft dough forms. The dough should be soft but not sticky.
  5. In a skillet, melt butter and add fresh sage leaves. Fry gnocchi until golden brown.
  6. Prick the sweet potatoes all over and microwave until soft, about 7 minutes. Let them cool, then scoop out the flesh into a mixing bowl.
  7. Serve hot with a sprinkle of Parmesan cheese and extra sage.
