Sweet Mango Habanero Salsa

Ingredients
  

  • 2 ripe mangoes peeled and diced into 1/4-inch pieces
  • 1 medium red bell pepper finely diced
  • 1/2 red onion finely diced
  • 1 small habanero pepper seeded and minced (or to taste)
  • 1/4 cup fresh cilantro chopped
  • 3 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin

Method
 

  1. In a medium bowl, combine the diced mango, red bell pepper, and red onion.
  2. Add the minced habanero pepper, starting with half if you're unsure about the heat level. You can always add more after tasting.
  3. Stir in the chopped cilantro, lime juice, honey, salt, and cumin. Mix everything together gently but thoroughly.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld together. The salsa will develop more heat as it sits.
  5. Taste and adjust seasonings, adding more habanero for heat, lime juice for acidity, or honey for sweetness. Serve chilled with tortilla chips or cinnamon-sugar chips.
