Ingredients
  

  • lbs pork tenderloin cut into 1-inch cubes
  • 3 cups broccoli florets
  • 2 bell peppers red and yellow, cut into chunks
  • 1 red onion cut into wedges
  • ½ cup sweet chili sauce
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 green onions sliced (for garnish)
  • 1 tablespoon sesame seeds for garnish
  • Cooked rice for serving

Method
 

  1. Preheat oven to 425°F. Line a large sheet pan with parchment paper or foil for easy cleanup.
  2. In a large bowl, whisk together sweet chili sauce, soy sauce, honey, olive oil, minced garlic, and grated ginger.
  3. Add pork cubes to the bowl and toss to coat. Reserve about ¼ cup of the sauce for later.
  4. Spread pork on the prepared sheet pan. Add broccoli, bell peppers, and onion wedges around the pork, drizzling vegetables with the reserved sauce.
  5. Roast for 15-18 minutes, stirring once halfway through, until pork reaches an internal temperature of 145°F and vegetables are tender and slightly caramelized.
  6. Garnish with sliced green onions and sesame seeds. Serve over steamed rice and enjoy!
