Sweet Chili Chicken Stir-Fry

Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 medium onion sliced
  • 2 cups broccoli florets
  • 3 cloves garlic minced
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon cornstarch optional, for thickening
  • Cooked rice or noodles for serving

Method
 

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the chicken pieces to the skillet and cook until browned and fully cooked, about 5-7 minutes. Remove from skillet and set aside.
  3. In the same skillet, add the sliced bell peppers, onion, and broccoli florets. Cook for 4-5 minutes, stirring occasionally, until the vegetables are tender-crisp.
  4. Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
  5. In a small bowl, mix the sweet chili sauce, soy sauce, and lime juice. If you prefer a thicker sauce, mix in the cornstarch.
  6. Return the cooked chicken to the skillet and pour the sauce mixture over the top. Stir to coat everything evenly.
  7. Cook for another 2-3 minutes, allowing the sauce to heat through and thicken slightly.
  8. Serve hot over cooked rice or noodles and enjoy!
