Sweet and Sour Chicken

Ingredients
  

  • 1.5 lb chicken breast cubed
  • 0.5 cup cornstarch
  • 2 eggs beaten
  • 0.33 cup vegetable oil
  • 1 bell pepper chunked
  • 1 cup pineapple chunks
  • 0.5 cup ketchup
  • 0.33 cup rice vinegar
  • 0.25 cup brown sugar

Method
 

  1. Toss the chicken cubes in cornstarch, then dip in the beaten eggs.
  2. Fry the chicken in the hot oil until golden and crispy, then drain on paper towels.
  3. Whisk the ketchup, rice vinegar, and brown sugar together for the sauce.
  4. Stir-fry the bell pepper and pineapple in the same pan for two minutes.
  5. Pour in the sauce and simmer until it thickens and turns glossy.
  6. Add the crispy chicken back in, toss to coat, and serve over rice.

Notes

Add the chicken to the sauce at the very end to keep it crispy.
