Servings: 4 servings

Ingredients

  • 1 lb hamburger ground beef
  • 1 clove* garlic for frying with beef
  • 1/2 teaspoon* salt for beef
  • 1/4 teaspoon* pepper for beef
  • 1 packet* McCormick's carne asada seasoning used instead of taco seasoning packet
  • 1 cup* minute rice cooked according to package
  • 1 tablespoon* Knorr tomato broth stirred into rice for color and flavor
  • 1 can 15 oz* black beans, juices left in to thicken
  • 2* avocados overripe, browned parts cut away
  • 1/4 teaspoon* garlic salt for guac
  • 1/4 teaspoon* chili piqui for guac, adds spice
  • 1/2 cup* mild cheddar cheese shredded fresh over hot beans
  • 1/2 cup* lettuce shredded, for topping
  • 2 tablespoons store-bought salsa per bowl

Method

  1. Fry up a pound of hamburger with garlic, salt, and pepper, using McCormick's carne asada seasoning instead of a taco seasoning packet for a healthier option.
  2. Make minute rice according to the package, but stir in some Knorr tomato broth to make it as red as you like, then cover, remove from heat, and let it sit.
  3. Check on your hamburger and stir it around, then get some black beans on the stove, leaving the juices in so they thicken up really good.
  4. Chop up some avocados for bite-sized pieces - if they're more ripe than expected, cut away the brown and mash them up with garlic salt and chili piqui to make a quick guac.
  5. Measure out four ounces of the beef and top it with a half a cup of the rice and a half a cup of the black beans.
  6. Shred some mild cheddar cheese nice and fresh over those hot beans so it melts really good.
  7. Top with lettuce, two tablespoons of store-bought salsa, and one tablespoon of the guac, and you're ready to go.

If your avocados get too ripe, don't throw them away - just cut away the brown and mash them up for a simple at-home guac.
