Sun-Dried Tomato One-Pot Pasta

This Mediterranean-inspired pasta is bursting with flavor from sun-dried tomatoes, garlic, and fresh basil. Plus, the sun-dried tomatoes add such a rich, tangy flavor that even picky eaters tend to love.

Ingredients
  

  • 12 oz penne pasta
  • 1 cup sun-dried tomatoes in oil drained and chopped
  • 4 cloves garlic minced
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1/4 cup fresh basil chopped
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes optional

Method
 

  1. Heat olive oil in a large pot or deep skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  2. Add the sun-dried tomatoes and red pepper flakes (if using), stirring for another minute.
  3. Pour in the vegetable broth and bring to a boil. Add the penne pasta, stirring to ensure it's submerged.
  4. Reduce heat to medium and cook for 12-15 minutes, stirring occasionally, until pasta is almost al dente and most liquid is absorbed.
  5. Stir in the heavy cream, spinach, and Parmesan cheese. Cook for 2-3 more minutes until spinach wilts and sauce thickens.
  6. Season with salt and pepper to taste, garnish with fresh basil, and serve immediately.
