Sun-Dried Tomato Chicken Gnocchi

Ingredients
  

  • 1.5 lbs boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 tsp salt divided
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 lb shelf-stable gnocchi
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes in oil drained and chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cups fresh spinach
  • 1/2 tsp Italian seasoning

Method
 

  1. Season chicken pieces with 1/2 teaspoon salt and black pepper. Heat olive oil in a large, deep skillet over medium-high heat. Add chicken and cook 5-6 minutes until browned and cooked through. Transfer to a plate.
  2. In the same skillet, add garlic and sun-dried tomatoes. Cook for 1 minute until fragrant, stirring frequently.
  3. Add gnocchi, chicken broth, heavy cream, Italian seasoning, and remaining 1/2 teaspoon salt to the skillet. Bring to a simmer, then reduce heat to medium and cook for 8-10 minutes, stirring occasionally, until gnocchi is tender and sauce has thickened.
  4. Stir in Parmesan cheese until melted and combined. Add spinach and cook for 1-2 minutes until wilted.
  5. Return cooked chicken to the skillet and toss everything together. Serve immediately with additional Parmesan cheese if desired.
