All the cozy cinnamon goodness of classic snickerdoodles, but in easy bar form! These are perfect for when you want to make cookies without all the rolling and scooping. Plus, they stay soft and chewy for days—if they last that long in your house!

Ingredients
  

  • 2 1/2 cups almond flour
  • 3/4 cup erythritol granulated sweetener
  • 1/2 cup softened butter or coconut oil for dairy-free
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cream of tartar
  • For topping: 2 tablespoons erythritol mixed with 1 tablespoon cinnamon

Method
 

  1. Preheat oven to 350°F and line a 9x9-inch baking pan with parchment paper, leaving some overhang for easy lifting.
  2. In a large mixing bowl, cream together softened butter and erythritol until light and fluffy, about 2 minutes.
  3. Beat in eggs one at a time, then add vanilla extract and mix well.
  4. In a separate bowl, whisk together almond flour, baking powder, salt, and cream of tartar.
  5. Add the dry ingredients to the wet ingredients and mix until a thick dough forms.
  6. Press the dough evenly into your prepared pan. Mix together the cinnamon-sweetener topping and sprinkle generously over the top.
  7. Bake for 22-25 minutes until the edges are lightly golden and the center is set.
  8. Let cool completely in the pan before lifting out and cutting into 16 squares. These taste even better the next day!
