Ingredients
  

  • 1 unbaked 9-inch pie crust sugar-free
  • 2 cups pecan halves
  • 4 large eggs beaten
  • 1 cup sugar-free maple syrup
  • 1/2 cup allulose or monk fruit sweetener
  • 1/4 cup butter melted
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt

Method
 

  1. Preheat your oven to 350°F. Place the unbaked pie crust in a 9-inch pie pan and crimp the edges.
  2. Arrange pecan halves in the bottom of the pie crust in a single layer.
  3. In a large bowl, whisk together the beaten eggs, sugar-free maple syrup, sweetener, melted butter, vanilla extract, and salt until well combined.
  4. Pour the filling mixture over the pecans in the pie crust.
  5. Bake for 50-55 minutes, or until the center is set but still slightly jiggly. Cover the edges with foil if they brown too quickly.
  6. Cool completely on a wire rack before slicing. The pie will continue to set as it cools.
