Ingredients
  

  • 6 cups sliced Granny Smith apples about 6 medium apples
  • ¼ cup erythritol or monk fruit sweetener
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 cup almond flour
  • ½ cup chopped pecans or walnuts
  • cup melted butter
  • cup erythritol or monk fruit sweetener for topping
  • ½ teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F and lightly grease a 9x13-inch baking dish.
  2. In a large bowl, toss the sliced apples with ¼ cup sweetener, lemon juice, cinnamon, and nutmeg until evenly coated.
  3. Spread the apple mixture evenly in the prepared baking dish.
  4. In a medium bowl, combine almond flour, chopped nuts, melted butter, ⅓ cup sweetener, and vanilla extract. Mix until crumbly.
  5. Sprinkle the topping evenly over the apples, making sure to cover as much surface area as possible.
  6. Bake for 35-40 minutes, until the apples are tender and bubbling and the topping is golden brown.
  7. Let cool for 10 minutes before serving. This is amazing warm with sugar-free vanilla ice cream or whipped cream!
