Ingredients
  

  • 12 slices white sandwich bread crusts removed
  • 8 oz cream cheese softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh strawberries
  • 3 large eggs
  • 1/4 cup whole milk
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 4 tablespoons butter melted

Method
 

  1. Mix cream cheese, powdered sugar, and vanilla until smooth. Gently fold in diced strawberries.
  2. Using a rolling pin, flatten each slice of bread until thin (this helps them roll without cracking).
  3. Spread about 2 tablespoons of the cream cheese mixture onto each flattened bread slice, then roll up tightly like a little burrito.
  4. In a shallow bowl, whisk together eggs and milk. In another bowl, combine granulated sugar and cinnamon.
  5. Dip each roll in the egg mixture, then roll in the cinnamon-sugar mixture to coat completely.
  6. Place rolls seam-side down in a greased 9x13-inch baking dish. Drizzle with melted butter. Cover and refrigerate overnight.
  7. In the morning, preheat oven to 375°F. Bake uncovered for 22-25 minutes until golden and crispy.
  8. Let cool for 5 minutes, then dust with extra powdered sugar before serving.
