Stuffed Mushrooms with Cream Cheese

Tender button mushrooms that are stuffed with a creamy garlic cheese filling and baked to golden brown perfection.

Ingredients
  

  • 24 white button mushrooms
  • 8 oz cream cheese softened
  • 1/2 cup grated Parmesan
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1/4 cup panko breadcrumbs
  • 2 tbsp olive oil
  • salt and pepper to taste

Method
 

  1. Preheat the oven to 375 degrees F and line a baking sheet with parchment.
  2. Gently twist the stems out of the mushrooms, finely chop the stems, and set the caps on the sheet.
  3. Saute the chopped stems and garlic in the olive oil for 3 minutes, then stir into the cream cheese with Parmesan and parsley.
  4. Spoon the filling into each cap and sprinkle the tops with panko.
  5. Bake for 18 to 20 minutes until the mushrooms are tender and the tops are golden.
  6. Season with salt and pepper and serve warm.

Notes

Pat the mushrooms dry before filling so they roast instead of steam.
