Ingredients

  • 4 large bell peppers any color, tops cut off and seeds removed
  • 1 lb lean ground turkey 93% lean
  • cups cooked brown rice
  • 1 can 14.5 oz diced tomatoes, drained
  • 1 small onion diced
  • 2 cloves garlic minced
  • ¾ cup shredded part-skim mozzarella cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh basil for garnish optional

Method

  1. Preheat oven to 375°F. Place hollowed peppers upright in a baking dish.
  2. In a large skillet over medium heat, cook ground turkey, onion, and garlic until turkey is browned and onion is softened, about 7-8 minutes. Drain any excess fat.
  3. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Cook for 2-3 minutes until heated through.
  4. Remove from heat and stir in ½ cup of the mozzarella cheese.
  5. Spoon the filling mixture evenly into the four peppers, packing gently. Add ¼ cup water to the bottom of the baking dish.
  6. Cover with foil and bake for 30 minutes. Remove foil, top each pepper with remaining cheese, and bake uncovered for 5 more minutes until cheese is melted.
  7. Let cool for 5 minutes before serving. Garnish with fresh basil if desired.
