Stuffed Bell Peppers

Bell pepper halves filled with ground beef, rice, and tomatoes, and topped with cheese.

Ingredients
  

  • 4 bell peppers halved and seeded
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 can diced tomatoes drained
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1 cup mozzarella cheese shredded
  • 0.5 tsp salt

Method
 

  1. Preheat the oven to 375°F and arrange the pepper halves cut-side up in a baking dish.
  2. Brown the ground beef with the onion and garlic, then drain off the grease.
  3. Stir in the cooked rice, diced tomatoes, Italian seasoning, and salt.
  4. Spoon the filling into each pepper half and pack it in gently.
  5. Cover with foil and bake for 25 minutes until the peppers soften.
  6. Uncover, top with mozzarella, and bake 10 more minutes until melted and golden.

Notes

Use a mix of pepper colors for the prettiest dinner table.
