Stuffed Bell Peppers

Sweet bell peppers are stuffed and baked with a cheesy rice, bean, and tomato filling.

Servings: 4 servings

Ingredients
  

  • 4 bell peppers tops cut, seeded
  • 1 cup cooked rice
  • 1 can black beans drained and rinsed
  • 1 cup diced tomatoes
  • 1 tsp cumin
  • 1 cup shredded cheese
  • 1 tbsp olive oil
  • 1 onion diced
  • 1 tsp salt

Method
 

  1. Preheat oven to 375F and stand the peppers in a baking dish.
  2. Saute the onion in olive oil until soft, then stir in beans, rice, tomatoes, cumin, and salt.
  3. Spoon the filling into each pepper and top with shredded cheese.
  4. Cover with foil and bake 30 minutes, then uncover and bake 10 more until the cheese melts.
  5. Let them rest a few minutes before serving.

Notes

A spoonful of salsa on top is never a bad idea.
