Strawberry Swirl Cheesecake

New York cheesecake with a fresh strawberry swirl baked into the cheesecake.

Ingredients
  

  • 2 cups graham cracker crumbs
  • 6 tbsp butter melted
  • 32 oz cream cheese softened
  • 1 1/4 cups granulated sugar
  • 4 eggs room temperature
  • 1/2 cup sour cream
  • 1 tbsp vanilla extract
  • 1 1/2 cups strawberries hulled
  • 2 tbsp sugar for puree

Method
 

  1. Heat oven to 325F. Press graham crumbs and butter into a 9-inch springform pan and bake 10 minutes; cool.
  2. Simmer strawberries with 2 tbsp sugar until soft, blend smooth, and strain. Set the puree aside to cool.
  3. Beat cream cheese and 1 1/4 cups sugar until smooth, then add eggs one at a time. Mix in sour cream and vanilla.
  4. Pour batter over the crust. Dot spoonfuls of strawberry puree on top and drag a knife through to swirl.
  5. Bake 60 to 70 minutes until just set in the center. Cool in the cracked oven 1 hour, then chill 6 hours.

Notes

Save a spoonful of puree to drizzle over each slice when serving.
