Strawberry Rhubarb Cobbler

Ingredients
  

  • 3 cups fresh strawberries hulled and halved
  • 3 cups fresh rhubarb cut into 1/2-inch pieces
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter cut into small pieces
  • 3/4 cup heavy cream
  • 2 tablespoons coarse sugar for sprinkling

Method
 

  1. Preheat oven to 375°F and lightly grease a 9x13-inch baking dish.
  2. In a large bowl, combine strawberries, rhubarb, 1 cup sugar, cornstarch, and vanilla extract. Toss gently and let sit for 10 minutes, then pour into prepared baking dish.
  3. In another bowl, whisk together flour, 1/3 cup sugar, baking powder, and salt. Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
  4. Pour in heavy cream and stir just until a soft dough forms. Do not overmix.
  5. Drop spoonfuls of dough over the fruit mixture, leaving some gaps for steam to escape. Sprinkle with coarse sugar.
  6. Bake for 40-45 minutes until topping is golden brown and fruit is bubbling.
  7. Let cool for 15 minutes before serving warm with ice cream or whipped cream.
