Stollen Bites

Watch out for the marzipan surprise in the soft spiced fruity bread bites, all coated in snowy white sugar!

Ingredients
  

  • 2.5 cups all-purpose flour
  • 0.25 cup sugar
  • 2.25 tsp instant yeast
  • 0.5 cup warm milk
  • 0.33 cup butter softened
  • 0.75 cup mixed dried fruit
  • 4 oz marzipan cut into cubes
  • 0.5 cup powdered sugar for dusting

Method
 

  1. Mix the flour, sugar, yeast, warm milk, and butter into a soft dough and knead until smooth.
  2. Knead in the dried fruit, then let the dough rise until doubled, about one hour.
  3. Pinch off pieces, flatten each, tuck a marzipan cube inside, and seal into balls.
  4. Arrange on a lined sheet and bake at 350F for 18 to 20 minutes until golden.
  5. Brush the warm bites with melted butter and roll generously in powdered sugar.

Notes

Give them a second dusting of powdered sugar once fully cool for that classic snowy look.
