Ingredients
  

  • 2 sheets frozen puff pastry thawed
  • 8 oz cream cheese softened
  • 1 cup frozen spinach thawed and squeezed dry
  • 1 cup canned artichoke hearts chopped and drained
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 egg beaten (for egg wash)
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F and line two baking sheets with parchment paper.
  2. In a mixing bowl, combine cream cheese, spinach, artichokes, mozzarella, Parmesan, and garlic. Season with salt and pepper, then mix until well combined.
  3. Roll out each puff pastry sheet and cut into 12 squares (about 3x3 inches each).
  4. Place about 1 tablespoon of the spinach mixture in the center of each square.
  5. Fold the corners up to meet in the middle, pinching the seams together to seal. Place on prepared baking sheets.
  6. Brush each puff with beaten egg for that gorgeous golden color.
  7. Bake for 15-18 minutes until puffed and golden brown. Let cool for 5 minutes before serving.
