Spinach and Feta Frittata

A frittata looks impressive but takes almost zero effort. This one comes together in one oven-safe skillet, which means fewer dishes on New Year's Day — yes please. The spinach and feta combo is classic and actually fills people up.

Ingredients
  

  • 8 large eggs
  • 1/4 cup whole milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 small onion diced
  • 3 cups fresh baby spinach
  • 3/4 cup crumbled feta cheese
  • 1/4 tsp red pepper flakes

Method
 

  1. Preheat oven to 375°F. Whisk eggs, milk, salt, and pepper together in a bowl and set aside.
  2. Heat olive oil in a 10-inch oven-safe skillet over medium heat. Sauté onion for 3 minutes until softened.
  3. Add spinach and cook, stirring, for 1 to 2 minutes until just wilted.
  4. Pour the egg mixture over the vegetables. Scatter feta and red pepper flakes evenly on top.
  5. Cook on the stovetop for 2 minutes until the edges start to set, then transfer to the oven.
  6. Bake for 12 to 15 minutes until the center is fully set. Slice into wedges and serve warm.
