Spinach and Cheese Mini Muffins

Soft, savory muffins with melty cheese. And a secret handful of spinach. Perfect for little hands!

Ingredients
  

  • 1.5 cups all-purpose flour
  • 2 tsp baking powder
  • 2 eggs
  • 0.75 cup milk
  • 0.25 cup olive oil
  • 1 cup shredded cheddar
  • 1 cup baby spinach finely chopped

Method
 

  1. Preheat the oven to 375 degrees and grease a mini muffin tin.
  2. Whisk together the flour and baking powder in a large bowl.
  3. In another bowl, beat the eggs with the milk and olive oil until combined.
  4. Stir the wet ingredients into the dry, then fold in the cheese and chopped spinach.
  5. Spoon the batter into the muffin cups and bake about 18 minutes until golden and set.

Notes

These freeze beautifully, so make a big batch and grab them as you go.
