Method
- Soak the thin potato slices in cold water for 10 minutes, then pat very dry.
- Toss with olive oil, smoked paprika, cayenne, and salt.
- Arrange in a single layer on parchment-lined baking sheets.
- Bake at 400F for 10 minutes, then flip each chip.
- Bake another 8 to 10 minutes until crisp and golden, watching closely so they don't burn.
Notes
A mandoline gives you the thinnest, crispiest chips.
