Spicy Korean Chicken Soup

A chicken broth that is spicy with gochugaru, scallions and soft noodles.

Ingredients
  

  • 1.5 lb chicken thighs bone-in
  • 7 cups water
  • 2 tbsp gochugaru
  • 4 cloves garlic minced
  • 1 tbsp soy sauce
  • 6 scallions sliced
  • 6 oz glass noodles
  • 1 tbsp sesame oil

Method
 

  1. Simmer the bone-in chicken thighs in the water for 25 minutes to make a broth.
  2. Remove the chicken, shred the meat, and discard the bones.
  3. Stir the gochugaru, garlic, soy sauce, and sesame oil into the broth.
  4. Return the chicken, add the glass noodles, and cook 5 minutes until tender.
  5. Stir in the scallions and serve piping hot.

Notes

Adjust the gochugaru to your spice tolerance, it builds as it simmers.
