- Preheat your grill to medium-high heat.
- In a small bowl, mix together olive oil, chili powder, paprika, cumin, garlic powder, onion powder, cayenne pepper, salt, and pepper to create the spicy rub.
- Rub the chicken breasts generously with the spice mixture.
- Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
- Remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
- Warm the tortillas on the grill for about 30 seconds on each side, or until slightly charred and pliable.
- Assemble the tacos by placing chicken strips in each tortilla and topping with your favorite toppings like diced tomatoes, shredded lettuce, shredded cheese, sour cream, guacamole, lime wedges, and chopped cilantro.
- Serve hot and enjoy!
Notes
For a milder version, reduce or omit the cayenne pepper. These tacos are great with a side of Mexican rice or beans. Leftover chicken can be used in wraps, salads, or quesadillas for delicious meals the next day.
