Method
- Preheat the oven to 400F. Halve the squash, scoop out the seeds, and rub the cut sides with olive oil and salt.
- Place cut-side down on a baking sheet and roast 35 to 40 minutes until tender.
- Warm the marinara in a saucepan while the squash roasts.
- Scrape the squash into strands with a fork and divide among bowls.
- Top with marinara, parmesan, and torn basil and serve warm.
Notes
Roasting cut-side down steams the squash for the most tender strands.
