Southwestern Chicken Soup

A warm southwest spicy soup featuring rotisserie chicken, black beans, and corn!

Ingredients
  

  • 2 cups shredded rotisserie chicken
  • 1 can black beans drained
  • 1 cup frozen corn
  • 1 can diced tomatoes with green chiles
  • 4 cups chicken broth
  • 1 tbsp taco seasoning
  • 1 tbsp olive oil

Method
 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the taco seasoning and toast for 30 seconds until fragrant.
  3. Pour in the broth, tomatoes, black beans, and corn, then bring to a simmer.
  4. Stir in the chicken and simmer for 15 minutes.
  5. Ladle into bowls and top with your favorite garnishes.

Notes

Crushed tortilla chips, avocado, and a squeeze of lime make this feel special.
